Honey Lemonade

Since I need cooling food I have never tasted this lesser yin lemonade. However, I have made it a number of times for gatherings both small and large. I can tell you this, no matter how much I make it’s always completely gone.

The best honey comes from the bees who live in your neighborhood. If you get it raw it helps you to be in harmony with your environment and you are less likely to develop allergies to your local plant pollens. Isn’t it great when preventative medicine is easy and delicious?

Makes 2 quarts:

3/4 cup lemon juice

3/4 cup mild flavored honey

2 cups hot tap water (not boiling)

Cold tap water to fill the 2 quart pitcher

To prepare begin by combining the hot water and honey in a 2-quart pitcher. Stir until the honey is dissolved. Add the lemon juice and enough cold water to fill the pitcher. Stir and serve over ice.

If you prefer your lemonade with a strong lemon flavor, increase the lemon juice to 1 cup.
