2 Delicata squash (~1 lb. ea)
1 Tbs. finely chopped fresh rosemary
1 Tbs. olive oil
1 tsp.sea salt
Preheat oven to 400 degrees F.
Slice the squash in half and scoop out the pulp and seeds from the center. Turn each half over on its cut side and slice into 1/2-inch slices.
Toss all ingredients together and layer on a sheet pan. Level the squash to a single layer.
Roast in the oven for 30-35 minutes or until soft and slightly golden.
