Serves 4
2 Delicata squash (~1 lb. each)
2 Tbs. butter, at room temperature
1 Tbs. sucanat or brown sugar
Preheat oven to 450 degrees F.
Slice the squash in half, length-wise. Scoop out the seeds and pulp. Then slice them in half again but this time at an angle so that the slices resemble little boats.
Rub the middle and cuts sides of the squash boats with butter and then sprinkle with sucanat or brown sugar.
Roast for 30-40 minutes until the squash is very tender.
Serve warm.
